Sausage Potato and Green Beans

We can't seem to get enough sausage in our house and have it on the menu every single week. While we made this green beans with potatoes and sausage recipe with kielbasa sausage, literally any precooked sausage will work great whether it's pork sausage, chicken, or turkey!

This is a terrific dinner recipe that's adaptable and you can easily use a different type of potato or vegetable to add variety to your dinner rotation.

Ingredient Notes

  • smoked sausage - we used kielbasa sausage but any precooked sausage is great! Chicken sausage, turkey kielbasa, or any of your favorite brands.
  • baby potatoes - red potatoes or small Yukon gold potatoes would be a good option too. Or you can cube Russet Potatoes.
  • fresh green beans - asparagus, bell peppers, or small pieces of broccoli can be used instead.
  • yellow sweet onion (like a Vidalia onion)- or a white onion or red onions
  • olive oil
  • fresh garlic - fresh minced garlic or jar garlic. Don't have fresh garlic? Use garlic powder to taste.
  • Italian seasoning - a mix of dried oregano and dried basil makes a great swap. Or herbs de Provence.
  • ground mustard - you can skip this if you don't have it
  • salt
  • black pepper
  • Fresh parsley for garnish

How to Cook Sausage Potatoes and Green Beans

There's just a couple simple steps for making sausage potato and green beans. Prep the meat and veggies, toss with the seasoning, and bake. Easy peasy!

Prep Ingredients

  1. Preheat the oven to 375℉. Cut the sausage into approximately ½” thick slices.
  2. Cut the baby potatoes in half. If there are large pieces, cut in half again so that they are all about the same size.Quarter the onion and cut it into thin slices.Clean the green beans and cut off any attached stems.
  3. Place the sausage, fresh green beans, potatoes, and onions into a 9x13” baking dish. Or, you can spread everything out on a large-rimmed baking sheet to get more of a crispy golden texture since the ingredients will have more space between them for browning.
  4. In a small bowl, mix together the olive oil, garlic, Italian seasoning, ground mustard, salt, and pepper.
  5. Pour the olive oil mixture over the sausage, green beans, potatoes, and onions then toss to coat them evenly.

Cook

  1. Bake in the oven for 40-50 minutes or until the potatoes are cooked through and tender. Stir the ingredients halfway through to ensure even baking.
  2. If the green bean start to brown too much, you can cover the dish with foil and finish baking.
  3. Serve sausage green beans and potatoes warm and garnish with fresh parsley.Enjoy! Serve with garlic bread on the side.

Variations

  • Add cheese- add cheese like parmesan cheese or cheddar cheese for a cheesy casserole like version.
  • Increase the heat - kick up the heat with crushed red pepper flakes or jalapenos
  • Use a different type of potato- cubed Russet potatoes or sweet potatoes would be a great variation!
  • Make this a casserole - mix in a condensed soup mix, a little chicken broth, and cheese. Bake in a casserole dish until cooked through.

Recipe Tips

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • I do not recommend freezing the leftovers, however, you can use frozen substitute your favorite kielbasa or other pre-cooked sausage in this recipe.
  • Baking the sausage potatoes and green beans on a rimmed baking sheet works great too and increases browning by spreading out the ingredients.
  • Canned green beans or defrosted frozen green beans can be used in place of fresh, they might not brown as well but either option will still taste great.

  • 2 pounds smoked sausage
  • 1 ½ pounds mini red potatoes
  • 1 pound fresh green beans
  • 1 medium yellow sweet onion
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • ½ teaspoon ground mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley for garnish, optional

Notes
