1. Spanish Cheese and Olive Platter

For Spanish tapas, olives are always a great choice. Having some of that mouthwatering queso and some marinade will boost up the taste factor too.

If you want some healthy, tasty tapas for a party with friends, an olive and queso platter is something you’d want.

First, make the marinade for the oilves. Combine sherry vinegar, spanish olive oil, thyme, a bay leaf, garlic and ground coriander seeds and pour over Spanish olives.

Cover and refrigerate overnight.

Next, make 1/4-inchslices of different Spanish cheeses. Spanish Manchego is a must for all tapas platters. Cabrales and Idiazabal cheese are good additions too.

If you aren’t able to find Spanish cheese, mozzarella, gouda and cream cheese could be substituted. Some sharp cheddar would be delicious as well.

Arrange the cheeses on a platter. Add your olives. Iberico ham, Serrano ham, Chorizo and Crusty bread would be great too.

2. Chicken Empanadas

This rich, tasty tapas recipe is wholesome and filling, which your friends will love.

Buy some empanada wrappers at the supermarket or online. These are flat, disk-shaped dough in packs of 10. Thaw them if frozen.

For these quick chicken empanadas brown thin chicken breast in olive oil. Remove from the pan and set aside.

Add onions to the pan and cook until translucent.

Add garlic, oregano, cumin and wine, stir frequently. Finally add tomato sauce and chopped olives. Stir to combine.

Add chicken breasts to the sauce and bring to a boil. Cover and lower heat, cook for about 15 minutes until chicken is cooked through.

Remove the chicken from the pan and put on a cutting board. Let the chicken cool. When cool enough to touch, shred using two forks.

Return the shredded chicken to the sauce and stir well until it is absorbed. Take the shredded chicken off the heat, uncover and allow it to cool.

Once the chicken is cooled add about 3 tablespoons of the shredded chicken to the wrap. Arrange the chicken so it’s not mounded in the middle.

Moisten the edges of the dough with water. Fold the empanada disk in half, press the edges together gently and use a fork to seal and crimp the edge.

Place the empanadas on a parchment lined baking sheet.

Use a paring knife to make 2 small slits on the top of each empanada so they can vent while they bake.

Bake the chicken empanadas for 20 minutes, or until they are golden brown. Let cool and enjoy!

3. Shrimp And Chorizo Bites

Shrimp and chorizo bites are one of those delicious easy tapas recipes you can try at home.

Its legit Spanish flavors of smoky-sweetness are to die for.

Combine peeled, deveined shrimp with herbs and spices.

Depending on your taste, you can combine garlic, oregano, a spritz of lime, some olive oil and a spritz of Sherry.

Skewer your shrimps with your 1/4-inch thick chorizos with a toothpick.

Once you make many bites, heat 1 tablespoon of olive oil over medium heat.

Pan sear your chorizo and shrimp tapas for 3 minutes or until the shrimp turns pink and the chorizo is light brown.
